WEDNESDAY BLOGGING CHALLENGE | A RECIPE I LOVE

 

I am not a great cook. I can do okay meals, they’re edible, sometimes nutritious. But I’m not about to start making up my own recipes at any point in the near future – or probably ever. So the best I can do for you guys is share a recipe I’ve made from the internet that I think is really good and that I managed to make without extreme disaster.

I love pie. But it’s never been a very successful thing for me, as mine inevitably suffered from the Great British Bake Off-termed “soggy bottom.” Last winter I found a recipe on the internet that was a ton of work (6 hours plus bake time, and that’s with a food processor that did the apple slicing for me), but turned out better than I had even hoped. Here’s what mine looked like:

      I’m not a decent cook, because I’ve always just ordered food when I actually want something yummy! My kid likes baking though, and wants to be on the Great British Bake Off someday, so we’ve been trying! Pies have always been difficult for me too. Soggy bottom! I learned a trick from this recipe – baking it on a baking tray. Apparently that helps the bottom bake better. And fashioning a foil dome so if the top is browning too much too fast, you can cover it and keep baking the filling and bottom for the required amount of time. Those are my only two tips. It was delicious though! (But I haven’t made another one since…)
