There are so, so many books I feel this way about. Some of them have happy endings, some of them have tragic endings, some of them have inspiring ones. But so many books have left me feeling completely satisfied when I turned the last page. Here are a few that really stand out to me from the many I could have included here:
I adored each and every one of these books from start to finish. Would recommend every one of them.

I interpreted “fantastic” as “alternative to realistic” and picked some books where the fantastic ending felt wrong for the realistic story, some where it was appropriate to a fantastic story. “Matilda” would be another example of a story that’s fantastic, in both senses, from beginning to end.
Oooooh I love this! It didn’t even occur to me to define the word – I just went to my automatic definition. But yours is much more interesting, and Matilda is absolutely doubly fantastic!
